This Tropical Shrimp Salad is an easy and delicious option for a light and refreshing meal, perfect for warmer days. The exotic combination of shrimp and mango with the fresh touch of yogurt dressing makes it irresistible.

Prepare the Shrimp:

  • Season 300g of Abrancongelados shrimp to taste.
  • In a skillet, add a drizzle of olive oil and cook the shrimp until lightly golden. Remove and set aside.
Prepare the Vegetables and Fruit:
  • Roughly chop the lettuce leaves.
  • Cut the shrimp and avocado (optional) into smaller pieces, halve the cherry tomatoes, and dice the mango.
Make the Yogurt Dressing:
  • In a small bowl, combine plain or Greek yogurt and the juice of half a lemon.
  • Season with salt, ground pepper, and chopped parsley to taste. Mix well until smooth.
Assemble the Salad:
  • In a large bowl, mix the lettuce leaves, cooked shrimp, cherry tomatoes, and mango cubes.
