Shrimp with Zucchini Spaghetti
Preparation
1. Cut the zucchinis into thin strips using a spiralizer, discarding the spongy interior.
2. Slice the onions into half-moons and chop the garlic cloves.
3. Heat a large frying pan with a drizzle of olive oil. Add the onions and garlic and sauté lightly until golden.
4. Add the shrimp meat, season with salt and pepper. Add the juice of one lemon and the mustard, and let cook lightly.
5. Finally, add the zucchini strips and sauté for about 4 minutes.
6. Serve garnished with fresh coriander.
