Baked Gilthead Sea Bream
Preparation
1 - Clean the fish and season inside and out with salt and pepper.
2 - Peel the onion, cut it into half-moons, and finely chop the garlic cloves.
3 - Place the onion and garlic at the bottom of a baking dish and lay the fish on top.
4 - Pour the white wine over and set aside.
5 - Wash the baby potatoes well and boil them in salted water for 20 minutes.
6 - Preheat the oven to 190ºC (375ºF).
7 - Once cooked, drain, slightly cool the potatoes, and cut them in half.
8 - Arrange the potatoes around the fish in the baking dish and season with salt, pepper, and paprika.
9 - Finally, drizzle everything with olive oil and bake in the middle of the oven for 30 minutes.
10 - After baking, remove from the oven and serve garnished with parsley.
